
I have to say that I am so sick of Barbecue!
Seriously, it's only halfway through summer and I don't think I can eat another thing barbecued. Okay, so maybe I am exaggerating slightly, but I need to make some quick and easy meals that don't need to be barbecued. But they need to be things I can make in the crockpot, or that be assembled early in the day because we are attempting to go a whole summer without turning on our air conditioning.
So my challenge to myself this week is so come up with meals everyday that don't turn my home into a sauna.
Breakfast and lunch is pretty much the same around my house which is why that part of the menu never changes.
Breakfasts - consists of oatmeal, cold cereal, fruit smoothies, toast & poached eggs.
Lunches - consists of soups, peanut butter sandwiches, or dinner leftovers.
Dinners - I will try to include lots of veggies this week.

Fish & Chips

Grilled Chicken, Potatoes, Salad
(Okay, I had to through in some BBQ for my husband)
